Anyone know the recipe hibachi uses for their fish and shrimp and scallops, the teriyaki sauce recipe i guess?

Here is the Recipe for REAL Teriyaki Sauce --- bring all of this to a boil and let cool. Use it as marinade or while cooking.





1/2 cup sugar

GINGER ORIENTAL DRESSING



1 teaspoon freshly grated ginger

1/2 teaspoons minced garlic

2 tablespoons low-sodium soy sauce

2 tablespoons water

2 teaspoons orange juice

1 teaspoons white vinegar



Place garlic and vinegar in jar, bowl, whatever. Allow to sit 10 minutes. This takes the "edge" off the garlic and makes it less sharp.

Add remaining ingredients and shake or stir well.



Makes 1/4 cup

CHICKEN FRIED STEAK, TEXAS STYLE



Use thin tender steaks, pounded or tenderized.



Beat 2 eggs with 1/2 cup milk, heat 1/2 inch oil in skillet.



Dip meat in egg mixture then in salted flour and fry.



Keep warm while making gravy.



Add flour to meat drippings, when coated well, gradually stir in milk. Cook until thick. Salt to taste. Serve gravy over the steak.

    Yes i've been there. in fact i used to work there. Dollar sushi night consist of "sashimi" style sushi which is just the sushi without rice or soy paper. they are pretty good if you get the spicy tuna, yellowtail, or salmon and mix the wasabi with the soy sauce. I would personally reccomend the shaggy dog thought which is a guest favorite. Its kami kama (crab) on top with shrimp tempura and cucumbers on the inside. Its very good but i would advice you to try a dinner and just let the sushi compliment your meal. You can sit at the hibachi grill and watch them cook your food. Its good for a show and prices usually range in the 20-30s.Has Anyone been to Shogun Hibachi and sushi japanese steakhouse?
    I'm not too fond of the Shogun. Everytime I went there, I felt sick afterwards and they don't have much selection on their menu. Havn't been to Sushi Japanese though.

    Sure it's legal. You could leave, but good luck finding another job with this economy. Managers know they can squeeze their employees right now because everyone is stuck where they're at until we get some economic recovery.
    I don;t think the job of a "chef" can be paid salary with out paying for overtime - check federal dept of labor website for categories of jobs that are exempt from overtime (meaning they don;t have to pay overtime) - I doubt that restaurant chef would be listed there

    If the chef cooked an appetizer, you can eat that while the main dish is being prepared.



    I assume you are eating with other people with whom you don’t normally dine. As you may already know, it is rude to start eating your food before the others have been served. But the point of eating by a grill is to eat the food while it is piping hot, so your dining companions will say “Go ahead!” In Japanese, they would say, “O saki ni!” or “O saki ni douzo!”



    However, after rereading the question, this might be a place where the customers cook it themselves. In that case, you and your dining companions are all grabbing meat and vegetables off of the grill as it gets done. In this case, I would not wait for absolutely everything to get cooked. I would still wait until everyone got a little piece of something before starting to eat unless someone said “Don’t wait for me.”



    Regarding the placement of the plate, it is good to move it close to the grill to get the food and then back in front of you to eat it. When you are eating, it should be in front of you. I am sure you are not a messy eater but if something fell between your dish and your mouth, there is less chance of it getting on a more communal area of the table.

The one time I have been to a hibachi grill, they had an item (such as rice) that was served to all customers - and this was the first item they made, so that everyone at the table had food. Then they continued with the individual orders for others at the table. In this instance, if everyone has been served something, then I think it is appropriate to continue eating.

    I've never been to a hibachi. However, I've been to benihana a couple times, and really really enjoyed it. They have great food as well as great entertainment.     It actually depends on what city you live in as the atmosphere varies greatly although the show is usually pretty much the same. While the Benihanas in Bangkok at the Marriott is rather drab, the location in Las Vegas offers some great animated entertainment along with the show of their chefs.



    As far as the food, it is pretty much similar in quality yet Hibachi may be a bit cheaper in some cities.

    Light and pleasant, soba noodles are a refreshing dish to eat.



    10 ounces soba noodles (buckwheat noodles)

    3 cups dashi

    3/4 cup dark soy sauce

    1/3 cup mirin

    2 teaspoons sugar

    2 ounces dried bonito flakes, tied in cheesecloth

    3 sheets toasted nori

    1-2 tablespoon grated fresh ginger

    1-2 tablespoon grated horseradish

    1/2 cup finely chopped green onions

    1/2 cup finely grated daikon radishes



    4-6 servings



    Bring pan of salted water to a boil; add soba noodles; cook 5 minutes. Add some cold water, then bring to a boil again, then cook until tender.



    Drain noodles and rinse in cold water. Arrange noodles on serving plates. Bring dashi, soy sauce, mirin, and sugar to a boil and cook for 2 minutes. Add bonito flake bundle and remove from heat; allow to steep for 20 minutes, then remove.

    Cool sauce by placing pan in ice.



    Cut toasted nori sheets into thin narrow strips and sprinkle over noodles. Serve noodles with mounds of ginger or horseradish, green onion, daikon, and individual bowls of sauce.



    To serve, mix in either ginger or horseradish, in addition to green onions, daikon into the noodles at the table, then dip noodles into the sauce.

    This is a quick and delicious side-dish to serve with your Asian themed meal. Or, add chicken, pork, shrimp, etc. to make it a meal in itself.



    2 garlic cloves, minced

    1 tablespoon fresh gingerroot, minced

    1/4 cup low sodium soy sauce

    3 tablespoons rice vinegar

    1/4 cup peanut oil

    3 tablespoons sesame oil

    1 dash hot pepper sauce

    1/2 green bell pepper, julienned

    1/2 red bell pepper, julienned

    1/2 yellow bell pepper, julienned

    4 green onions, sliced diagonally

    2 cups snap peas, sliced diagonally

    2 tablespoons sesame seeds, lightly toasted

    2 (8 ounce) packages fresh udon noodles



    4 servings



    In a jar with a tight fitting lid, combine the garlic, ginger, soy sauce, rice vinegar, peanut oil, sesame oil and hot pepper sauce. Close the lid, and shake vigoroulsy to blend. Set aside to let the flavors blend.



    Bring a large pot of water to a boil. Add udon noodles, and cook until tender, about 3 minutes. Drain, and place in a serving bowl.

    In a microwave-safe bowl, combine the peppers with green onions and peas. Heat in the microwave until warm, but still crisp.



    Add to the noodles in the bowl, and pour dressing over all.

    Toss to coat, then sprinkle with sesame seeds.

    Toasting sesame seeds: Toast sesame seeds in a dry skillet over medium heat. Shake pan or stir occasionally until lightly browned and fragrant, about 3 minutes.

    4 cups cooked rice or 1 cup uncooked rice

    1 cup frozen peas, thawed

    2 tablespoons carrots, finely diced

    2 eggs, beaten

    1/2 cup onions, diced

    2 tablespoons soy sauce

    salt

    pepper



    4 servings



    Cook rice following instructions on package (Bring 2 cups water to a boil, add rice and a dash of salt, reduce heat and simmer in covered saucepan for 20 minutes).



    Pour rice into a large bowl to let it cool in the refrigerator.

    Scramble the eggs in a small pan over medium heat.

    Separate the scrambled chunks of egg into small pea-size bits while cooking.



    When rice has cooled to near room temperature, add peas, grated carrot, scrambled egg and diced onion to the bowl.

    Carefully toss all of the ingredients together.

    Melt butter in a large frying pan over medium/high heat.

    I was in a diet class a number of years ago and the average hibachi meal is listed at close to 1600 calories! The calories come from lots and lots of fat and portion sizes that are probably double what you should eat. My info assumes a steak/chicken combo entree, with all the sauteed veggies, is 600-800 calories depending on serving size, fried rice as 250-400 depending on serving size, a couple hundred calories for the oil laden dips and dressing... it all really adds up. Urgh....

    i work at a hibachi/sushi restraunt and i am a hibachi cook in trainning and a good tip would be anywhere between 15-20% like you said and yes it is customary to tip your hibachi cook extra personally because just a plain tip gets split between the waiter and the hibachi cook. So yeah hibachi cooks like it when you tip them a little extra personally. Well in the restraunt i work at the hibachi cooks tip all depends on if they did a good job on their hibachi show and if they pleased the customer with casual conversation and such (like $20 or so if it was pretty good, but our reastraunt is in a somewhat small town so it might be higher depending on where you live) plus the 15-20% regular tip which the waiter gets part of.

    10 c. cooked rice

    2 white onions, chopped

    3 green onions, chopped

    1 green pepper, chopped

    1 carrot

    1/2 lb. fresh pork

    3 eggs, scrambled

    4 mushrooms, sliced

    1 sm. piece fresh ginger, chopped

    3 tbsp. Sake (wine)

    5 tbsp. soy sauce

    1 tbsp. MSG (Ajinomoto)

    3 tbsp. butter

    It's simple to change this dish by adding two cups of cooked diced shrimp or chicken instead of egg, says Wilson. If you have a Chinese grocery store where you live, you can sometimes get a nice piece of seasoned and cooked roast pork, all ready cut into little pieces, and then you can have "roast pork and fried rice," which he knows is a real American favorite.





    2 cups long-grain converted white rice, rinsed

    Salt

    1/4 cup oyster sauce

    2 tablespoons light Japanese soy sauce

    3 large eggs, beaten until just blended

    2 tablespoons peanut or vegetable oil

    1 cup frozen baby peas, thawed

    2 or 3 scallions, thinly sliced, including some of the green tops, 1/3 to 1/2 cup

    2 cups diced store bought roast pork, optional

    Sesame oil, as needed







    At least 1 day before you plan to make the fried rice, place the rinsed rice in a heavy, medium-sized saucepan. Add 2 cups of cold water and salt, to taste. Bring to a boil over high heat. Cover, and cook at a gentle boil until the water has cooked down to the level of the rice. With a spoon (not a fork), stir the rice well. Cover, and reduce the heat to low. Continue to cook for about 15 minutes, or until the rice is tender. Fluff with a fork. Cool to room temperature before covering and refrigerating for 24 hours.

    Break up any clumps of the cold rice with your fingers and set aside. In a small bowl, stir together the oyster sauce and soy sauce and set aside.



    Coat a large, nonstick skillet with nonstick vegetable spray and set over medium-high heat. When the skillet is hot, add the eggs, swirling them around to make sure they coat the whole bottom of the pan. Cook, without stirring, and adjusting the heat as necessary, until the eggs are firm and cooked through but not yet starting to brown, lifting the skillet and tilting it so that the eggs cook evenly. Slide the eggs onto a plate and when they have cooled, cut into small pieces and set aside.



    Return the skillet to the burner and heat the oil over high heat. When it is hot, add the peas and scallions, and cook, stirring constantly, until the scallions are limp, about 1 minute. Stir in the rice, sauce mixture, eggs and roast pork until well mixed. Continue to cook, stirring, until the rice is heated through, 1 to 2 minutes. Plate and drizzle with sesame oil, to taste.
    SERVES 2 , 2 1/2 cups (change servings and units to US metric units)

    1 tablespoon extra-virgin olive oil

    1/2 cup onion, chopped

    1/4 cup , frozen

    1 egg

    2 tablespoons margarine

    2 tablespoons soy sauce



    ~Directions~



    1. use the boiling bags of rice, it's very easy and just the right amount.



    2. Saut茅 onion, peas and carrots in olive oil.



    3. Move vegetables to side of pan and lightly scramble the egg.



    4. Add rice and margarine and saut茅 for 5 minutes.



    5. Add soy sauce and cook for 1 minute.



    6. Serve hot.

    The Japanese restaurant I go to in town uses garlic butter in their fried rice and it is to dye for!!!! You need to use Japanese rice that are one day old, it cannot be freshly cooked!! First heat your wok with some oil , add scramble egg and vegetables such as carrot and peas. Stir fried it for a minute or so, and add rice and mix it well. Add soy sauce and garlic butter, the more the better. That's if you like garlic!!!! Mix it up for about two minutes until the soy and butter covers the rice. Add a little bit of roasted sesame seed!! Voila...you should have delicious fried rice!!!!

    you cook regular white rice if you just make it - make sure it isn't sticky or wet, it should be cooked but dry- add soy sauce to taste. in wok heat over high heat, fry egg(s) to scramble, add rice, add butter add mixed veggies(i use frozen peas/carrots/corn mix plus chopped carrots and zuccini). add more soy sauce if desired, salt and pepper to taste

    If you put your chopsticks in the bowl, mix it and the broth becomes slightly cloudy, I would guess it's miso soup.



    But since you mention it has mushrooms and chives in it, I'm going to guess you're talking about is dashi soup. Dashi is Japanese stock. It can be made from kombu (dried kelp), katsuo-bushi (dried bonito) flakes, niboshi (dried small sardines), hoshi-shiitake(dried shiitake mushrooms), and more. Kombu dashi and dried shiitake mushroom dashi are known as good vegetarian stocks. I also call it otsuyu.

    You can take an extra serving of vegetables or rice. But i would suggest vegetables because too much rice is not good either. Try taking some Japanese cucumber along with the meal, they help lighten the heavy taste. Fresh lettuce that's in thip strips are also a good idea.

    I LOVE this soup. The easiest and cheapest way I've found to make it is to use oriental ramen seasonings (just the spice mix, not the noodles) and add green onion and sliced mushrooms. Its delicious! To make it even better, instead of mixing the spice pack with water, mix it with beef broth. Hope this helps! Enjoy!

    1/2 c. grated carrots

    1/4 c. diced string beans

    1/4 c. cabbage, diced

    1 clove garlic, diced

    3 tbsp. flour

    Salt and pepper to taste

    Mix all the ingredients together, shape into patties. Heat some oil in a skillet, brown patties on both sides. Place in a baking pan and bake 25-30 minutes. Top with a slice of Cheddar cheese 5 minutes before done. Great with mayonnaise, lettuce, tomato, and the works.

    Hi, I'm a former chef and have answered this question a couple of times. I'm reposting a former answer here:



    By Hibachi flavor, I'm thinking you mean the Japanese teppanyaki style of cooking popularized at places like benihana's. Here's a recipe for the sauce they use on everything (by the way, you don't need a special cooking surface, a griddle would be fine...just keep the heat high, make sure it's well seasoned so things don't stick, and move quickly).

    Teppanyaki sauce:

    4 cups water

    1 1/4 cup soy sauce

    1/4 cup red wine

    1/3 cup oyster sauce

    dashi stock or hon dashi powder

    6TBs sugar

    a whole small onion, two whole cloves of garlic, a one inch piece of ginger (if you want to get really involved you can roast these, skin on, before tossing them in the broth)

    3 TB sesame seeds



    Stick this all in pot, bring to a boil, then simmer for an hour. Just wait until it reduces down to a flavor and consistency you like. Strain, add fresh sesame seeds if you like, and you've got it. You can refrigerate this sauce and use it anytime you want that teppanyaki flavor.



    Another key to cooking this way is allowing the veggies to brown and caramelize when you cook...high heat is key.How do u cook the veggies like they do at Japanese steakhouses (hibachi)?
    Not much to it, cut up onions, garlic, zucchini and mushrooms(common veggies, but use what you like) and add to a saute pan with heated sesame oil and butter. When the veggies are about half way cooked, add as much soy sauce as you like(the more you add, the more salty it will taste, but for say 2 cups of veggies use 2 TBSP. of soy sauce). That's is about it. Enjoy!

    The sauce will NOT taste right if you don't let it sit overnight. And please don't try to substitute ketchup for the tomato paste! The water is needed to bring this to the right consistency

In true you can cook any noodles you want including lo-mein.     In China, making "hand-pulled" noodles is an art involving holding the stretched out paste in both hands and whirling it around several times. Then the paste is laid out on a board and folded and refolded repeatedly. Eventually the paste is transformed into long, thin, noodles.     Japanese noodles

Instant ramen has become especially popular in the United States and Mexico. Ramen noodles have a firm texture and are usually yellowish color. These noodles vary in shape, width, and length. They are often served in a meat or fish based broth although since they are widely popular, there are a great variety of dishes containing ramen noodles.

    Some examples of ramen dishes are: Sapporo Ramen, Miso Ramen, Kitakara Ramen, Shio Ramen, Tonkotsu Ramen, and Shoyu Ramen.



    Shirataki - Known as the "white waterfall" these clear Japanese noodles are made from the root of Amorphophallus Konjac(aka Devil's Tongue plant), or from a similar plant. The roots are processed into a gelatin, Konnyaku, from which the noodles are made. These noodles are often described as chewy or rubbery. Shirataki noodles have a high nutritious value. These noodles contain high amounts of the fiber Glucomannan and are low in carbohydrates and low in calories. As a result of this, these noodles have recently becoming popular among dieters in the west. However Shirataki noodles have been used in traditional Japanese cooking for many years to add texture to Sukiyaki and Oden, winter stews.



    Soba - A medium width native Japanese noodle made from buckwheat flour (soba-ko) and wheat flour (komugi-ko). Like pastas, soba noodles are available in dried form although they taste better when made fresh from flour and water. These noodles are served in a variety of Japanese dishes and they may be served hot or cold with dipping sauce. Some examples of soba dishes are: Zaru and Mori Soba (chilled), Kake Soba, Tempura Soba, Kitsune Soba, and Tororo Soba. Note: Although the popular Japanese dish Yakisoba includes "soba" in its name, the dish is actually made with Chinese style noodles (chukamen).



    Somen - Somen noodles are a very thin, white, wheat-based noodle. They are usually served chilled in the summertime with dipping sauces although they may be used in soups and other hot dishes. Somen noodles are very similar to hiymugi and udon noodles, only they are much thinner (about 1.3mm in width). During the summer months many Japanese consume large amounts of chilled somen to stay cool.



    Hiymugi - Hiyamugi noodles are wheat flour noodle similar to somen and udon noodles and somewhere in between the two in size. These noodles are often served in the same manner as somen and udon noodles. While they are mostly white it is not unusual to find bundles mixed with noodles of pinkish or brown

    At Hibachi, I think the rule is to eat as it is served. Enjoy the show while you are eating. I typically wait until every one in our group (not the whole table) gets their part of each course. When they toss the shrimp at you, what are you gonna do?     I agree with everyone else. It should be thought of as a show with your meal, not show then "cold" meal. I've also watched this on the Public Access channels and that is the way they do it in Japan as well.

    Okay so I love the food on a hibachi table. I like steak and scallops. Is there a good recipe for fried rice with steak and scallops to make it taste like it does on a hibachi table?I love the Hibachi table, how can I get food like that...?
    I'm sure you've noticed that food cooked on the hot table griddle doesn't have a ton of spices or sauces...this is because the flavor comes from the cooking process itself.



    If you want to recreate this at home, you'll need a large steel wok (get one from a restaurant supply store...it'll be a heck of a lot cheaper than you'd find at a kitchen or home store, it'll be much higher quality, and you'll find a variety of large sizes). Make sure it's NOT non-stick...non-stick coatings (like teflon, silverstone, etc.) can't stand up to extreme heat, and at really high temperatures can release fumes that can make you sick. Besides, with a lot of heat %26amp; a little bit of stirfry oil, sticking food won't be a problem.



    In addition to the wok, you'll need a lot of heat...more than your residential stove can produce. One of the easiest ways to get the heat you need is to pick up a propane turkey fryer...it doesn't need to be fancy, something from your local megamart will do just fine.



    Since propane %26amp; open flames are involved, you'll have to do your cooking outdoors, on a solid, non-flammable surface (like a driveway or concrete patio), away from any buildings (stay at least 10 feet away from the side of your house, shed, garage, etc.).



    Ditch the pot that came with the turkey fryer, just fire up the burner %26amp; put the wok right on top. This'll get you the heat you need to make a professional-quality stirfry. Use any recipe you want, it will taste awesome...this is because the pan will be so hot that it'll cook the food fast without letting things get soggy or mushy, plus your meats %26amp; veggies will have that "char" flavor that makes Benihana's food taste so good.



    Just be sure to always keep the food moving (don't try to "flip" it in the pan, you don't want to knock your burner over...use a steel spatula to keep "stirring" your food) and keep a close eye on how things are progressing...it'll be done cooking very, very fast, so don't walk away from it.

    Ummm this sounds like such a bad idea. Pay the money for a sitter.     Orange Ginger Dressing



    1/4 cup rice wine vinegar - unseasoned

    2 medium garlic cloves

    1 tablespoon diced fresh ginger

    1 tablespoon sesame oil

    2 teaspoons soy sauce or to taste

    2 teaspoons orange juice concentrate

    1/2 teaspoon red pepper flakes or to taste

    3/4 cup vegetable or peanut oil

    Place all ingredients, except the vegetable or peanut oil, in a blender. Blend for a few seconds. While the motor is running, slowly add the oil in a small stream until mixture is emulsified.

    Makes about 1 1/2 cups dressing.

    Ginger Orange Dressing

    1/4 cup fresh orange juice

    4 teaspoon canola oil

    1 tablespoon minced scallions

    1 teaspoon minced peeled fresh ginger

    1/2 teaspoon grated orange zest

    1/4 teaspoon minced garlic

    Salt and freshly ground black pepper to taste

    I actually ate hibachi yesterday. Yes, the vegetables get cooked with the meat. It is cool to watch, though, so I go as often as my budget allows. I normally get a few veggie sushi rolls (1 avocado roll, 1 cucumber roll, 1 pickled veggie hand roll) or a vegetarian bento lunch. Ask your waiter or waitress about non-hibachi and vegetarian options.

Instead, they'll serve each individual dish as soon as it was cooked. While you're eating the dish, the chef will cook other dishes while you watch. Unless the place you went was understaffed, the chef will time their pace so the next dish will be served when you're almost done with the previous dish. You may mix everything together if you wish. Personally, I'd try to eat every individual dish while they're still hot.

    You can eat it either way. The only faux pax I have ever seen is when people pull the plate too far away from the chef before he is done the cooking.

    I surmise and believe most waiters in Japanese restaurants with hibachi "chefs" divide tips. But that alone does not provide adequate recompense to the hibachi "chef" who is more an entertainer than a waiter or "chef". What do you give a piano player who plays your favorite songs at your request or a singer doing the same. If you are asking for your special music, you are denying them an opportunity to perform for others. You need to pay for their time, trouble and talent.



    I believe 15%-20% to the food server and the same for the "chef" depending upon your satisfaction levels.



    Of course, I am a former food service employee from 40 years ago and still tend to tip heavily.
