If you have a wok, start it at a high temp, with a little oil (2-3 tbsp)
Have a 1/4-1/2 cup of water sitting by
Add veggies, stir/toss until they are all coated with oil.
When they start to look like the oil is disappearing, add in the water a little at the time.Cover, but stir frequently
Basically you are steaming the veggies at a high temp and fast rate of cooking.
If you notice, they heat the "grill" oil it down then wipe it with a wet cloth so that it steams up?and then they cover the veggies for a few minutes.... well that is what you will be doing in your pan/wok
