when you first sit down they give you some soup thats kinda like broth or whatever- has mushrooms and chives in it?What is the name of that brothy-soup starter dish that they give you at the Japanese hibachi restaurants?
It could be many different soups, without a little more description it is hard to tell.



But around here most often you get a miso soup. Even then, different places make it differently.What is the name of that brothy-soup starter dish that they give you at the Japanese hibachi restaurants?
If you put your chopsticks in the bowl, mix it and the broth becomes slightly cloudy, I would guess it's miso soup.



But since you mention it has mushrooms and chives in it, I'm going to guess you're talking about is dashi soup. Dashi is Japanese stock. It can be made from kombu (dried kelp), katsuo-bushi (dried bonito) flakes, niboshi (dried small sardines), hoshi-shiitake(dried shiitake mushrooms), and more. Kombu dashi and dried shiitake mushroom dashi are known as good vegetarian stocks. I also call it otsuyu.

It is a clear vegetable broth with french fried onions, sliced mushrooms, and scallions. Buy a good quality vegetable broth at the supermarket and heat in on medium heat with sliced button mushrooms. Put in some french fried onions and sliced scallions just before you serve.

1 tsp soy sauce

1 TBSP soy sauce



boil broth, add a little of what you desire:

tofu cubes

thinly sliced chives

well it's not miso cause miso doesn't have mushrooms
