When you go to a Japanese restaurant that has those hibachi stoves that you sit around while they cook, they serve sauce along with the rice, etc.
The sauce is kind of creamy and is sort of orangish/pink. Does anyone know what is in it? And, I mean what is in the stuff they serve in restaurants.
I think there is some kind of wierd chemical. It seems to make my friend have diahrea. But, I don't know what is in it.Is MSG in the hibachi sauce they serve in restaurants?
I think you're referring to "yum yum" sauce. It's mayonnaise based and slightly sweet. I definitely enjoy.
I don't know about weird chemicals though. Obviously, if it's made in-house, each restaurant's is going to be a bit different. I've seen copycat recipes online and nothing includes anything weird or unusual.
MSG isn't really a "chemical" either, it's a salt-like, sodium based flavor enhancer that's found in pretty much all fast food.
There are two main versions of the recipe I've found - one made from scratch and one that uses a mayonnaise base:
From "Scratch"
3/4 cup soybean oil
1 egg
1/2 teaspoon dry mustard powder
1/2 teaspoon salt
2 teaspoon sugar
dash cayenne pepper
1-1/2 tablespoons white vinegar
dash cayenne pepper
1-1/2 teaspoons tomato paste
1 tablespoon melted butter
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/4 cup water
Mayo Based:
1-1/4 cup Hellmann's mayonnaise
1/4 cup water
1 teaspoon tomato paste
1 tablespoon melted butter
1/2 teaspoon garlic powder
1 teaspoon sugar
1/4 teaspoon paprika
dash cayenne pepperIs MSG in the hibachi sauce they serve in restaurants?
Actually, hibachi is a small grill in Japan. Teppanyaki is the style of restaurant you're talking about. They do not exist in Japan. Teppanyaki means cooked on an iron griddle.
As the sauce, that would entirely depend on the restaurant or chef.Is MSG in the hibachi sauce they serve in restaurants?
You are probably overreacting. I bet it is a combination of mayo and ketchup. It is not some weird chemical. Also, if you friend go diarrhea I would have to ask if other people who had the same thing got sick too. If not, then it is not the sauce.
