How do i make scrambled eggs like they do with hibachi fried rice?

i've been wondering how the chefs make the scrambled eggs that they put in hibachi fried rice. are there any ingredients? or just regular scrambled eggs?How do i make scrambled eggs like they do with hibachi fried rice?
Here are some great recipes:



Fried Rice (Hibachi Style Fried Rice)

Yield: 2 陆 cups (serves 2)



Make at home, restaurant style fried rice. My daughter loves the fried rice you can get at expensive Japanese Hibachi style restaurants. I make this all the time for her and she loves it. I usually make it without the peas and carrots.



2 cups cooked rice, cooled

1 tablespoon extra virgin olive oil

陆 cup onion, chopped

录 cup peas and carrots, frozen

1 egg

2 tablespoons margarine

2 tablespoons soy sauce



I use the boiling bags of rice, it's very easy and just the right amount.



Saut茅 onion, peas and carrots in olive oil.



Move vegetables to side of pan and lightly scramble the egg.



Add rice and margarine and saut茅 for 5 minutes.



Add soy sauce and cook for 1 minute.



Serve hot.

Benihana Hibachi Chicken Rice

Yield: 4 servings



Served at Benihana. Made in a pan but can be done on a flat grill like at the restaurant.



4 cups cooked rice

1 cup frozen peas, thawed

2 tablespoons carrots, finely grated

2 eggs, beaten

1/2 cup onion, diced

1 1/2 tablespoons butter

2 tablespoons soy sauce

1 cup chicken breast, diced into 1 cubes

salt, to taste

black pepper, to taste



Cook rice following instructions on package (Bring 2 cups water to a boil, add rice and a dash of salt, reduce heat and simmer in covered saucepan for 20 minutes). Pour rice into a large bowl to let it cool in the refrigerator.



Scramble the eggs in a small pan over medium heat. Separate the scrambled chunks of egg into small pea-size bits while cooking.



When rice has cooled to near room temperature, add peas, grated carrot, scrambled egg and diced onion to the bowl. Carefully toss all of the ingredients together.



Melt 1 1/2 tablespoons of butter in a large frying pan or flat grill over medium/high heat.



When butter has completely melted, dump the bowl of rice and other ingredients into the pan and add soy sauce plus a dash of salt and pepper. Cook rice for 6-8 minutes over heat, stirring often.



This fried rice can be prepared ahead of time by cooking the rice, then adding the peas, carrots and egg plus half of the soy sauce. Keep this refrigerated until you are ready to fry it in the butter.

yes it's just an egg, push all your rice and other ingredients to the sides of the wok or large skillet after it is cooked a fried to your liking, then in the empty center add a tablespoon of sesame oil (or whatever oil you like to use) and crack your egg and drop it in the oil, quickly scramble the egg until it is cooked but moist, now stir your rice back into the egg, not the egg into the rice - oddly this does make a difference in the dispersion of the egg... hope I made it easy to understand.How do i make scrambled eggs like they do with hibachi fried rice?
Hi,

Take long grain, white rice; place into a skillet / hot with a little oil.

You want to make the rice brown up a bit; turn beige in color.

As it is changing in the hot oil, chop up very, very tiny; some ham bits, bell peppers, red/green, an onion.

Add those tiny, tiny pieces into your rice. Let them brown up too.

Add water to cover the rice; you will need twice the water, to the rice.

So consider 2 cups of water to 1 cup of rice. Let it boil 1 minute, turn down to a low heat; cover and do not uncover til 15 minutes. The rice will steam and soak up the water; should be tender, not soggy rice.

Rice will look double in size.

When it is done; put the heat higher.

Scramble 2 full eggs in a container. Very slowly drop in some of the egg mixture into the hot rice. Stir quickly and let it cook a bit; then add more egg mixture and stir quickly; repeat, again and again til it is all inside the rice. When you are finished. Cover and let it set for 5 minutes. Serve hot.

For flavoring, you could add Soy Sauce, on your rice once you plate it.
