What is this Japanese Soup called?

I'm looking for a recipe.

It's the soup you sometimes get at a hibachi grill.

It's chicken soup, with the very few scallion onions and mushrooms.

Basically chicken broth, and tons of salt.What is this Japanese Soup called?

Did you even read his description? Miso soup isn't a clear broth with scallions and mushrooms. Not every hibachi serves miso soup as an appetizer. This is Japanese onion soup as described below. Also, not every Japanese soup is prepared with dashi stock. I lived in Tokyo for several years.

It's miso soup and it's miso *soy* based, not chicken broth. You can get packets of dried soup mix at the grocery store that you just add hot water to. Not quite the same but it'll do. If you're in an area with an Asian grocery, you can pick up fresh miso, which is a very thick paste, and make your own. Basically you're going to boil some water, mix the paste in to your taste liking, add whatever garnish you like.. scallions, dried mushrooms slices, tofu chunks, etc. You can also use the miso paste to marinate chicken and fish for grilling or as a base for salad dressing.. yum.What is this Japanese Soup called?
This is Miso soup - it's available in package form (by the bowl) from Trader Joe's, but be prepared to add fresh ingredients as the ones in the package are gross!



Add fresh tofu (cubed) and green onions before cooking, and flavor to taste with Hoisin Sauce and Sriracha hot chili sauce afterwards.



You can also make from scratch, if you are so inclined; I'm sure Emeril has a recipe for it.

Unless you are going to an Americanized Japanese restaurant, it is not chicken soup based. It is dashi based (bonito flake broth)





3 C Dashi (prepared soup base)

1 tsb soy sauce

1 tsb salt

1 tsb sake





Bring soup stock to a boil, turn off the heat, add salt, soy sauce and sake, serve while hot. Can be served simply with green onions and mushrooms but can be served with kamaboko (fish cake), clams, boiled chicken, daikon sprouts, tofu cubes.What is this Japanese Soup called?
Japanese Onion Soup



Ingredients

1/2 stalk celery, chopped

1 small onion, chopped

1/2 carrot, chopped

1 teaspoon grated fresh ginger root

1/4 teaspoon minced fresh garlic

2 tablespoons chicken stock

3 teaspoons beef bouillon granules

1 cup chopped fresh shiitake mushrooms

2 quarts water

1 cup baby portobello mushrooms, sliced

1 tablespoon minced fresh chives

Considering the hundreds of thousands of soups that are out there, no one can be sure which specific soup you are talking about but I found several soups that fit your description. Good Luck!

You can buy it in the oriental aisle in grocery stores. They come in single serving packets you add hot water to.
