Authentic japanese fried rice?

there is an hibachi grill called Otani in the town I used to live in that had the BEST friend rice I've ever had, but have had a hard time replicating the taste. any suggestions?Authentic japanese fried rice?
Ingredients :



2 tbl Oil

1 x Egg, beaten

3 cup Cold Cooked Rice

4 x Scallions With Green Tops, chopped

1/2 cup Cooked Shrimp Or Crabmeat

1/2 cup Frozen Green Peas, thawed and drained

1 tbl Soy Sauce

Heat oil in nonstick pan; add egg and scramble briefly. Add rice, scallions, seafood, and green peas. Stir gently until hot; about 3 minutes.

Add soy sauce; mix thoroughly before serving.

NOTES : It is important to use cold rice in fried rice. A short grain white rice is used in Japan.Authentic japanese fried rice?

Well, funny enough- fried rice isnt that Japanese. I mean you can get it in Japan- but its not at traditional Japanese restaurants. We lived there for three years...

Anyway- Use japanese sticky rice (cooked and cooled), fry some chopped onion in some seasame oil and a little olive or veggie oil (my japanese restaurant uses some butter too), mix lightly an egg or two depending on how many people you are feeding, fry the rice, pour on egg and stir it in the rice, add a little seasame oil, soy sauce, salt and pepper and voila.
