When buying food at wholesale costs, how much does the average chicken or steak or shrimp w/ rice cost to make?

Roughly how much does it cost the average hibachi restaurant to create a plate of chicken/steak/shrimp and fried rice? I am trying to calculate how much each plate would be if food is bought at wholesale costs.

You roughly calculate it in the cost of the meat, that is after trimming, the cost of preparing it, and the cost of the side items and the service to the guest, let says chicken breast is $1.50 raw, you broil it and serve it with as you said rice and veg, these factor into the cost, plus is there someone deboning the chickens or do they come that way, cooking ingredients and sauce have to accounted for, the cost does include the cooks pay and the servers portion, known as labour cost and the company mark up.



So food cost is 30-35%, labour cost is 25-30% and markup is 30-50%, so to make and serve the dish cost $3.00 FC, add the LC so that is another .75-$1.00 then the mark up that could be $3-4, so in the end that chicken breast would be on the menu around $7.50-9.00, steak around $12-15 and shrimp the same as the steak, depending on how large the shrimp are and the way it is cooked.
