well.. my family has a japanese restaurant here in sao paulo, it isn't extremely elegant, the whole style is like a japanese ryotei but it is not a ryotei of course.. well whatever i think you should put your last name as the name of the restaurant like, sato's ... maruko's, shiina's that names sounds good to me, or maybe if you only make sea food you can name it kaiyou ryouri. of course the name should go in japanese.
料理屋 りょうりや "Ryori ya" , Restaurant to serve delicacy, sounds most likely Japanese style.

小料理屋 こりょうりや "Koryouri ya". sounds more personal and cozy style delicacy.

和食屋 "Washoku ya", literally Japanese restaurant, it sounds rather traditional style.

居酒屋 "Izaka ya", it's Japanese style cusual pub. this need to serve some Sake, Japanese liqueur, as well as nibbles and cozy dishes. It could also serve some western style dishes like pizza or friench fries; whatever go with Sake and Beer. it's very inclusive and cusal. it shold not be way too fancy and not too expencive.

料亭 Ryoutei remind us very expensive ones, like politicians and CEOs would meet together and have some lobbying. It sometime associate with Geisha, Nakai, hostes/serving lady. Not affordable for ordinally people.

割烹 Kappou sounds rather fancy and snobbish, serving culinary delights. but somehow-affordable for ordinally people.

This might fit waht you are in mind, cool and classy Japanese restaurant..
